Recipe #6 - Roast Pork with Green Apples & Golden Squash

Finally getting the opportunity to try out the sixth recipe in my selection of Campbell's Cookbook finds.  Roast Pork with Green Apples & Golden Squash.



I have to tell you - I LOVE apples.  Pork and apples go well together, so I was excited about this one especially.  I also really like butternut squash, so, while the boys were excited about the pork, I was excited about the trimmings.

The way I did it took a lot longer than the recipe called for.  Of course, I used two pork tenderloins and they were recently thawed, so very cold.  It took about an hour to get it all cooked.

Unfortunatley, the long cooking time turned the apples to mush.  The recipe calls for a sauce to be made with those.  I think this would have been good, but I didn't want to make a sauce for just me.  My daugther may have tried it, but the boys would have vetoed it. 

The squash, however, was lovely.  I sprinkled a little brown sugar over it and ate it as my side.



The potatoes are my husbands doing.  Red potatoes, butter, parmesan cheese, paprika, garlic salt and a little crushed red pepper.  YUM!

The dish takes more effort than most of the others, but the pork is flavored very nicely, the squash is delish, and the sauce would probably be excellent if you have some takers.
